A simple dish that's easy to get wrong
Quesadillas fail in predictable ways: the outside browns before the cheese melts, or the cheese melts while the tortilla goes limp and greasy. Getting both right at the same time is a matter of heat control and not rushing it — a moderately hot plancha, a little patience, and pressing rather than stacking.
